  15. {Take 5 sprigs of thyme.
  16. {Prepare 1 tbsp of cumin.
  17. {Prepare 1 tbsp of cornstarch.
  18. {Get to taste of Salt.

Steps to make Jollof Rice, Fried Okra & Spiced Tofu:

  1. Chop the onion, pepper, tomatoes, chilli, ginger & garlic.
  2. Slice okra lengthwise, coat in oil, cornstarch, cumin & paprika.
  3. Coat the tofu in oil and cumin.
  4. Blend ingredients, and add the chipotle paste.
  5. Heat some oil in a pot, and gently fry the paste..
  6. Add curry powder, nutmeg, and tomato puree. Cook for a couple more minutes.
  7. Add the rice and cook for a couple of minutes.
  8. Add the stock, thyme and bring to a boil, then reduce heat to a simmer. Cook for about 15/20 minutes.
  9. While the rice is cooking, heat some oil in a skillet and fry the okra.
  10. Do the same for the tofu.
  11. Once it's all nicely cooked, serve!.
