Steps to make Foul Fry:

  1. First of all prepare tahini sauce. Tahini is white sesame paste. For tahini : fry 3 tbsp sesame seeds until aromatic. Cool and grind to fine paste with 2 tbsp olive oil. For tahini sauce : mix all the ingredients mentioned except water and then add water as required till you get pouring consistency. Keep in the refrigerator until use. (You can even skip tahini sauce).
  2. Foul medammas comes cooked in a tin. Otherwise you can soak dry fava beans for 8 hours and pressure cook till the beans are soft..
  3. Finely chop onion, garlic and green chili. Crush tomatoes to fine paste and fava beans to coarse paste in blender..
  4. In a pan heat oil. Fry onions till translucent. Add cumin and finely chopped garlic. Fry till aromatic..
  5. Add pureed tomatoes and fry. Add salt, pepper powder and fry till water evaporates..
  6. Now add the crushed fava beans. Stir well and add 1/4 cup water. Cook for 2mins..
  7. Add chopped coriander leaves and green chilies. Cook for a minute and switch off the flame..
  8. Transfer to a serving bowl. Drizzle tahini sauce and olive oil. Garnish with coriander leaves and serve with tandoori roti, kubus or any bread along with sliced onion and lemon..
